Have you had ramen to go and felt that it just didn't taste the same? 

One of the reasons is our delicate, fresh noodles. You need to start slurping immediately to fully enjoy their best flavors and texture. If you wait even 5 minutes, the noodles just won't be as good.

That is why we spent months working on making sturdier noodles for take-out. Our new noodles are made to travel. And they have the same great flavor and quality as the noodles served in our restaurants.

You've seen a lot of ramen topped with a thick red sauce. This wasn't the norm when we started this trend back in the 1960s. Now it's practically a ramen tradition.

The Original Spicy Red Sauce (Hiden no Tare in Japanese) is our house-made hot sauce. 

Our secret togarashi pepper blend is made of 30 different spices and ingredients. We aged it for several days to create a paste that is spicy, yet savory with a hint of sweetness. This sauce enhances the ramen, creating a richer, more flavorful bowl.

You'll realize the importance of dashi (soup stock) when you start cooking Japanese food. It's also a key part of our ramen. 

ICHIRAN’s unique dashi is produced to our exacting standards under very strict and watchful eyes. The recipe is one of our most guarded secrets - only four people know the entire recipe.

Our dashi is what adds the umami flavors to the broth so we can serve you quality, flavorful ramen every single time.
